 Steak & Lemon Rosemary Veggies

  • Top Sirloin Steaks

  • salt & pepper

  • Garlic, smashed and peeled

  • Butter, 2 slices per steak

  • Rosemary sprigs, about 2 per steak

  • 3 yellow squash, sliced

  • 1 onion, sliced

  • 1 pkg. mushrooms

  • Garlic, smashed and peeled

  • 2 T fresh lemon juice

  • 2 lemons, sliced

  • 8 sprigs Rosemary

  • 1 T lemon pepper

  • 1 T Montreal steak seasoning

  • EVOO

Preheat the oven to 400. Lay all the veggies on a sheet pan, drizzle with oil and coat in seasonings. Juice half a lemon to get 2 Tablespoons of juice, pour that on the veggies and toss. Add the remaining sliced lemons and sprigs of rosemary. Bake 25-30 minutes until the onions are soft and the squash is browned.

STEAK:

Coat each side of the steaks generously with salt and pepper. Drizzle EVOO on a cast iron skillet over high heat. When it’s screaming hot, add the steaks. Flip them every minute, for 5-8 minutes depending on how you like your steak. Add the butter, garlic, and rosemary. Spoon the juice onto the steak and let them cook another 5 or so minutes. Take it off the heat and let it rest a bit before cutting into it. If you need help watch the Gordon Ramsey YouTube video on how to cook a steak!!

This is such a different and refreshing meal! I would love to make this when we have friends over!
