Steak & Lemon Rosemary Veggies
Top Sirloin Steaks
salt & pepper
Garlic, smashed and peeled
Butter, 2 slices per steak
Rosemary sprigs, about 2 per steak
3 yellow squash, sliced
1 onion, sliced
1 pkg. mushrooms
Garlic, smashed and peeled
2 T fresh lemon juice
2 lemons, sliced
8 sprigs Rosemary
1 T lemon pepper
1 T Montreal steak seasoning
EVOO
VEGGIES:
Preheat the oven to 400. Lay all the veggies on a sheet pan, drizzle with oil and coat in seasonings. Juice half a lemon to get 2 Tablespoons of juice, pour that on the veggies and toss. Add the remaining sliced lemons and sprigs of rosemary. Bake 25-30 minutes until the onions are soft and the squash is browned.
STEAK:
Coat each side of the steaks generously with salt and pepper. Drizzle EVOO on a cast iron skillet over high heat. When it’s screaming hot, add the steaks. Flip them every minute, for 5-8 minutes depending on how you like your steak. Add the butter, garlic, and rosemary. Spoon the juice onto the steak and let them cook another 5 or so minutes.
