Seafood Zoodles
1 onion, diced
Garlic, minced
4 zucchinis, spiralized
2.5 lb. bag frozen seafood medley (de-frosted)
5 c. marinara sauce
White cheddar, shredded (optional)
Parsley, minced (optional)
In a large pan over medium heat, add EVOO and garlic. Cook a few minutes until the garlic is fragrant then add the onion. Allow the onion to cook 8-10 minutes until translucent, then add the zoodles. Stir, and add the seafood medley and sauce. Put on a lid, reduce the heat to med/low, and let it simmer 10 minutes. Top with cheese if you get down like that. Chopped parsley would have been perfect on this also!
