Sausage Zoodle Alfredo
5lb. Italian sausage
4 zucchini, spiralized
1 onion, diced
garlic
italian seasoning
salt & pepper
1 T butter
xanthan gum
about 1 cup heavy whipping cream
about 2 cups shredded cheese (I did Mozzarella and Colby Jack)
Spiralize the zucchini, place them on a clean kitchen towel, salt them, and let them vibe for at least 20 minutes.
In a large skillet over med/high heat, cook all the sausage. I like to keep bigger chunks, but do you. Make sure it’s cooked through, then remove it and set aside.
To the same skillet, add the onion, zucchini nubbins, garlic, Italian seasoning, and s&p. When the veggies have cooked down, add a dab butter. When the butter is melted, add literally one shake of xanthan gum. NO MORE! Stir, add the heavy whipping cream. Stir, stir, stir. Once it’s nice and thick and has darkened in color, add the cheese.
When the cheese has melted, add the sausage back in. Pat down any excess water on the Zoodles with another clean towel. Turn off the heat and add in the Zoodles. The heat from the sauce will cook them don’t worry!
Give it one last stir and BAM!
