Egg Roll in a Bowl

  • 2 lb Italian ground sausage

  • 1 head cabbage, sliced thinly

  • 3 carrots, grated

  • garlic, minced

  • 2 T fresh ginger, minced

  • 1 onion, puréed (you could easily dice the onion but Ian the Onion Hater liked it this way!)

  • 2 T chili paste

  • 1/2 c liquid aminos

  • green onions for the top

In a large sauté pan, cook the sausage over medium high heat then set aside. Add more oil to the pan and throw in the ginger and garlic. Once fragrant, add about 1/3 of the cabbage and a few spoonfuls of onion. Once that cooks down, repeat until you’ve used all the cabbage and onion. Then add the carrots.

Throw in the chili paste and aminos. Let it all cook 5-6 minutes and serve! Top with green onions if you have them!
