Creamy Chicken & Broccoli Soup
3 boneless skinless chicken breasts
½ bottle Italian vinaigrette dressing
2 onions, chopped
1 head garlic, minced
7 stalks celery, chopped
2 c cauliflower rice
1 head broccoli, shopped
1 c frozen peas
1.5 qt chicken stock
1 t Xanthan Gum
1 T oregano
1 T parsley
1 T rosemary
2 bay leaves
1.5 c half n half
1 parmesan wedge, shredded + the rind
Salt & fresh black pepper
Marinate the chicken breast in the vinaigrette dressing 24-48 hours.
In a large cock pot add the chicken, onions, garlic, celery, cauliflower rice, peas, broccoli, chicken stock, xanthan gum, parsley, oregano, rosemary, and bay leaves.
Cook on low for 8-10 hours.
When you get home, add the cream and parmesan. Taste and add salt and pepper as necessary.
You know what would be so good with this? Parm crisps. Ugh. I didn’t have any but hopefully you do.
