Cold Chicken Salad
5lb boneless skinless chicken breast
2qt chicken stock
4 lemons
Salt
Peppercorns
2 rosemary sprigs
2 bay leaves
Sage
Oregano
Poultry seasoning
2 c red seedless grapes (cotton candy grapes are the best)
2 c walnuts, chopped
5-6 stalks celery, chopped
1 bunch fresh dill, diced
1 bunch green onions, sliced
1 c mayo
1 single serving pkg plain greek yogurt
2 T sour cream
1 T Splenda brown sugar
1 T Garlic powder
2 T Ancho chile powder (it needs to be ancho)
2 t cayenne pepper
salt & pepper
Boil the chicken in the seasoned stock for 20 minutes. Just eyeball the seasoning in the stock and stop when the spirits tell you to. Pull out one of the breasts and make sure its fully cooked before you take them all out. Shred all the chicken. Add in the celery, walnuts, grapes, scallions, and dill. Make the dressing, and mix it all together. This salad is best after sitting in the fridge for a day! Enjoy!! love ya!
