Chicken Taco Soup
2 ancho-chile marinated chicken breasts (from Costco) (If you don’t have that plain will work or marinate in a can of chipotle peppers in adobo sauce)
1 head cauliflower, chopped
3 bell peppers, chopped
1 onion, chopped
2 cans diced tomatoes
1 can green chilis
1 can diced jalapenos
1 qt chicken stock
Salt to taste
Shredded cheese
Green onions, sliced for garnish (optional)
Dump everything aside from the salt, cheese, and green onions in the crock pot. Let it cook on low 8-10 hours.
When it is done, shred the chicken with a fork. Taste the broth and add salt accordingly. Top with shredded cheese and green onions!
