Cheesy Garlicky Scrambled Eggs & Oven Bacon

  • 7 eggs

  • 6 cloves garlic, minced

  • 1.5 c cherry tomatoes

  • 1 c shredded cheddar cheese

  • butter

  • salt & pepper

  • splash water

  • 1 lb. bacon

Preheat the oven to 425. Place a silicon mat on a large baking sheet and lay all the bacon on it. Bake for 20 minutes.

Scramble the eggs in a large bowl, add a splash of water and s&p. Heat a large skillet on medium heat and add a pad of butter. Throw in the garlic and let that cook until fragrant. Add the cherry tomatoes and cook those until they start to wilt, about 8 minutes. Add the eggs and just let them cook without stirring for a few minutes. Once the bottom layer is mostly solidified, give them a stir and add the cheese. Cook it all for a few more minutes so the cheese melts. YUM!!!!!
