Bacon Wrapped Chicken Breast

1 Chicken breast

4 strips of bacon

1/2 c herbed goat cheese (Trader Joes)

salt & pepper

Preheat the oven to 350. Slice the chicken lengthwise but not all the way through to make a pocket. Stuff with goat cheese. Wrap with bacon. Secure with toothpicks.

I like to sear the bacon on a hot pan before I put it in the oven. That way the bacon gets crispy, but if you want to just throw it in the oven you can. You’re wrong though.

So sear all sides on a HOT pan then throw it in the oven for 15 minutes.

I served this on a bed of arugula, Parmesan shavings, and fresh lemon juice.
