Libby’s Chicken & Zoodles

Ingredients:

5 chicken breasts

1 bottle Kraft Zesty Italian Dressing

5 tomatoes, sliced

5 large slices white cheddar cheese

6-7 zucchini, spiralized

2 oz cream cheese

1 c chicken stock

1/2 c (ish) heavy cream

garlic

s&p

olive oil

Marinate the chicken in the Italian dressing at least 8 hours.

Preheat the oven to 350. Spiralize all the zucchini, and spread them out on a sheet pan. Drizzle with olive oil, season with s&p and set aside.

Heat olive oil in a skillet over med/high heat. Once hot add the chicken and brown on both side. Place all the chicken in an oven safe pan and top with slices of tomato. Throw those in the oven for 20 minutes.

Add more oil and garlic to the skillet and cook until fragrant. Chop the extra zucchini and tomatoes and throw those in. Add the cream cheese. Once that has been incorporated add the chicken stock. Once that is all mixed, add the cream in splashes until you get the right consistency. You’ll want it to be a little thick but still runny, it will thicken as it simmers. Taste the sauce and adjust the seasoning if needed. Put a lid on the pan and reduce heat to low, and let that simmer.

Take the chicken out and add the cheese. Allow those to cook for another 20-25 minutes. Throw the zucchini in the oven at this point as well.
